Recipe
Intended to be a Pliny the Elder clone, the hops combination was tweaked to replace Centennial with Azacca. ~6.4% ABV.

Wort
2.5 lb pilsner LME
4.0 lb light / pale LME
1.0 lb dextrose
1.0 lb crystal 20 (milled grain)
0.5 lb amber malt (milled grain)

Hops Boil
1.00 oz Columbus hops (60 min boil)
0.50 oz Simcoe hops (15 min boil)
0.25 oz Columbus hops (15 min boil)
0.50 oz Simcoe hops (5 min boil)
0.50 oz Azacca hops (5 min boil)

Dry Hops
0.50 oz Simcoe hops (7 days)
0.50 oz Azacca hops (7 days)

Yeast
WLP001 California Ale

Brewing
Steep specialty grains at 150ยฐF for 45 min. Remove your grains, then bring your water to a boil (volume dependent on your kettle size). Remove your kettle from the heat and add 1/2 your LME, stirring as you go. Stir the LME into the wort thoroughly. Return to heat and boil for 60 min, adding hops at the specified times. With 10 min remaining in the boil, add the dextrose and last 1/2 of LME. Stir the LME into the wort thoroughly and return to boil. Cool wort and top off with water to make 5 gal. Pitch yeast at 70ยฐF, then ferment at 68-70ยฐF.
